For my girl: Recipe #1

Our college sophomore will be living in an apartment this year. While she will still be on campus, we were able to switch to a reduced meal plan. Therefore, since she will be fending for herself a little more often, I am going to offer some easy, healthy recipes (with real food, not processed junk) for her over the next week or so.  Here's the first one...

Microwaveable roasted red potatoes:




Single serving:
Two red potatoes, washed and quartered
1 TBSP olive oil
Garlic Salt
Pepper

Four servings:
Six or 8 red potatoes
2 TBSP olive oil
Garlic Salt
Pepper

Wash and quarter potatoes.  Put in microwaveable container.  Add oil and garlic salt and pepper.

For single serving, cook on high for 3 minutes, stir, then cook on high for two additional minutes.

For four servings, cook on high for three minutes, stir, high for three more minutes, stir, then high for two more minutes.  Check for softness.  Cook for two more minutes if not soft enough.

*May also cook in conventional oven @ 350 degrees until reaching the desired softness (usually 30 minutes).
